Veggie Baking: Raspberry and Apple Cake


I admit I've always been a lousy baker and this is probably the first time that I've actually been impressed with something I have made. Recently I've had a lot more time on my hands after going part-time at work and I thought I would start using my days off wisely and broaden my baking skills. My grandma used to make exceptional cakes and I was taught from a very young age how to make a basic sponge cake. My mother on the other hand is not so lucky in the kitchen, she tends to go all free spirited with ingredients and has cakes that don't quite set right or are as hard as a rock, unfortunately I seem to take more after my mother when it comes to pastry cooking than my grandma and that is something I want to change.


Thanks to Magazine.co.uk I was recently gifted a 12 month subscription to Veggie magazine to help inspire me in the kitchen. I've been vegetarian for just over 10 years now and I'm always looking for new recipes. Veggie magazine has a fantastic selection of recipes both in print and online, as well as vegetarian product reviews, interviews with veggie chefs and various cooking tips. A lot of the recipes are seasonal and there are great ideas for any occasion. As my parents were visiting for a New Years Day lunch, I decided I wanted to bake something to impress them and found this scrumptious raspberry and apple cake recipe online.


This cake was exceptionally easy to make and tastes fantastic. It is a really light, sweet cake with a heavenly cream cheese and raspberry topping. Another thing I loved about making this cake was that all the ingredients were easy to find to the supermarket, making the whole process fuss free.
